I am a long term cancer survivor, perhaps in part to a change in lifestyle. Betsy and I eat a lot more produce than most people. We live in Wyoming. Generally those two are mutually exclusive statements. We buy our produce at a co-op, which means that we have to buy by the case. If we can’t find someone to trade with, we wind up with a lot of one variety that has to be eaten pretty quickly. We were throwing a lot of produce away and I set out to extend the storage life of the produce. That is what led to the development of the E.G.G.
